The spice box, or masala
dabba as it is known in India, is an integral part of the Indian kitchen. It
contains the most usual spices used in daily cooking. It most commonly consists
of a circular stainless steel box with 7 smaller inner compartments containing
individual spices.
Indian food has become very popular over the years but can
seem complicated to make at home. With your masala dabba, you have all the
spices required to make many healthy Indian meals without using mass produced
sauces and pastes.
Our masala dabba contains chilli powder, turmeric, ground
coriander, ground poppy seeds, garam masala, cumin seeds and finally a container
with a mixture of whole spices (cinnamon bark, cardamom pods and cloves)
With the box, comes a collection of recipes I have picked
up and developed over the years from my mother, aunts, grandmothers and good
friends. The recipes are not complicated. The amounts of the spices in the
recipes can be adjusted but the quantities given in the recipes produce dishes
that can be eaten by most people whether new to Indian food or seasoned veterans!
